Melt the coconut oil in a frying pan on a medium heat
Slice the onion, chop the broccoli and fry in the coconut oil until they begin to soften
Add the chopped garlic, sliced mushrooms, chopped chilli and chunks of chicken breast and fry for a further 5 minutes
Add a dash of water to the pan if it gets too dry and begins to burn
Slice the baby sweetcorn in half and add to the pan with the soy sauce and fry for 2 minutes
Add the green beans and continue to fry for another 2 minutes
Lastly grate the ginger and stir through, heating for only 1 additional minute
Stir through the sesame oil just before serving
