Goat’s cheese & walnut salad

Ingredients

Salad

  • 100 g mixed salad leaves
  • 1 apple
  • 1/4 red onion
  • 1 handful dried cranberries
  • 80 g goat's cheese
  • 10 walnut halves

Salad dressing

  • 1/2 lemon
  • 1/2 tsp wholegrain mustard
  • 1 tbsp extra virgin olive oil

Instructions

  • Roughly chop the salad leaves and place in a large bowl.
  • Core and slice the apple, finely chop the onion, slice the cranberries, crumble the goat's cheese and break the walnuts into small pieces.
  • Add all ingredients to the salad leaves and mix.
  • To make the salad dressing, squeeze the half lemon into a bowl, add the mustard and olive oil and stir. Pour over the salad and enjoy!
