Coconut chia seed pudding

Soaking time 1 hour

Ingredients

  • 3 tbsp chia seeds
  • 1 tbsp protein powder
  • 1 tsp xylitol (or honey)
  • 1 tbsp desiccated coconut
  • 1/4 tsp nutmeg
  • 200 ml milk of choice (e.g. coconut milk)

Instructions

  • Add all dry ingredients to a jar and shake together (or stir in a bowl).
  • Add the milk and shake in the jar until well mixed.
  • Leave to soak overnight for best results (or at least for 1 hour).
  • Add an extra pinch of nutmeg when serving, depending on taste preference.
