Chicken & broccoli stir-fry

Ingredients

  • 1 tbsp coconut oil
  • 1/2 onion
  • 1/2 broccoli head
  • 2 cloves garlic
  • 5 button mushrooms
  • 1 chilli
  • 150 g chicken breast
  • 5 baby sweetcorn
  • 2 tbsp soy sauce
  • 1 handful green beans
  • 1 tsp grated fresh ginger
  • 1 tsp sesame oil

Instructions

  • Melt the coconut oil in a frying pan on a medium heat
  • Slice the onion, chop the broccoli and fry in the coconut oil until they begin to soften
  • Add the chopped garlic, sliced mushrooms, chopped chilli and chunks of chicken breast and fry for a further 5 minutes
  • Add a dash of water to the pan if it gets too dry and begins to burn
  • Slice the baby sweetcorn in half and add to the pan with the soy sauce and fry for 2 minutes
  • Add the green beans and continue to fry for another 2 minutes
  • Lastly grate the ginger and stir through, heating for only 1 additional minute
  • Stir through the sesame oil just before serving
