Eggs & avocado on toast

Ingredients

  • 1 avocado
  • 1 tsp butter
  • 1 handful spinach
  • 1 slice wholegrain bread
  • 2 eggs
  • 1 tbsp mixed seeds

Instructions

  • Cut the avocado in half, remove the pit and slice the flesh, or mash with a fork if preferred.
  • In a pan on a low heat, melt the butter and add the spinach. Cook for a couple of minutes, or until wilted.
  • Toast the bread and top with the spinach and avocado.
  • How to make poached eggs – In a pan, boil water and then allow to simmer on a low temperature (without bubbles). Use a metal spoon to stir the water in a circular motion, and crack open the eggs into the middle. Allow to cook for 2 minutes until the whites of the egg looks cooked, but the yellow is still runny.
  • Serve the poached eggs on the toast and sprinkle over the mixed seeds.
