Strawberry & vanilla granola

Ingredients
- 400 g oats
- 70 g desiccated coconut
- 140 g sunflower seeds
- 50 g flaked almonds
- 50 g pumpkin seeds
- 40 g hemp seeds / chia seeds / flaxseeds
- 160 g coconut oil
- 120 g runny honey
- 2 tsp vanilla extract
- 20 g dried strawberries (or fresh strawberries when serving)
Instructions
- Preheat the oven at 160 deg C.
- Mix the dry ingredients in a bowl.
- Melt the coconut oil for 1 minute in a microwave or heat in a pan on a low heat until melted.
- Stir the coconut oil into the dry mix until covering all the oats.
- Pour the honey over and mix again.
- Cover a baking tray with baking paper and spread the oat mix evenly in the tray.
- Bake for 20 minutes (at 160 deg C), mixing half way to ensure the oats are toasted evenly.
- While the mix is baking, break up the dried strawberries into small pieces with your hands.
- After the oat mix is baked, leave on the tray to cool for 30 minutes.
- Add the dried strawberry pieces to the oat mix and store in an airtight container for up to 4 weeks.
