Shakshuka

Ingredients

  • 1 tbsp coconut oil
  • 1/2 yellow pepper
  • 400 g canned chopped tomatoes (1 can)
  • 1 tomato
  • 1/4 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried garlic powder
  • 4 eggs
  • 1 handful goats cheese
  • 1 handful chopped fresh parsley

Instructions

  • In a frying pan, heat the coconut oil on a medium heat
  • Chop the pepper and cook for a few minutes in the coconut oil until soft
  • Add the canned chopped tomatoes, fresh tomato sliced, paprika, cumin and powdered garlic and heat for a few minutes while stirring
  • Using a wooden spoon, part the mix to allow space for the eggs
  • Break the eggs into the pan, crumble the goat's cheese over the top and cook on a very low heat until the egg whites are cooked through
  • Sprinkle the chopped parsley over the top just before serving
