dried garlic powder

goats cheese

chopped fresh parsley
Instructions
In a frying pan, heat the coconut oil on a medium heat
Chop the pepper and cook for a few minutes in the coconut oil until soft
Add the canned chopped tomatoes, fresh tomato sliced, paprika, cumin and powdered garlic and heat for a few minutes while stirring
Using a wooden spoon, part the mix to allow space for the eggs
Break the eggs into the pan, crumble the goat's cheese over the top and cook on a very low heat until the egg whites are cooked through
Sprinkle the chopped parsley over the top just before serving
