Prawn soba noodles

Ingredients
- 200 g soba noodles (buckwheat noodles or bean noodles)
- 1 tsp coconut oil
- 150 g king prawns (shelled)
- 2 handfuls mange tout
- 2 tsp sesame seeds
- 1 handful coriander (fresh)
Dressing
- 2 tbsp cashew nut butter
- 1 tbsp fresh lime juice
- 1 tbsp soy sauce
- 1/2 tsp dried chilli powder
- 1 tsp garlic powder
- 1 tsp sesame seed oil
Instructions
- Boil the noodles for 3-5 minutes (or follow instructions on pack)
- In the meantime, melt the coconut oil in a frying pan on a medium heat
- Add the prawns and cook for a few minutes until they turn pink. If the pan becomes dry, add a dash of water
- Add the mange tout and continue to cook for 1 minute
- Prepare the dressing; add all ingredients to a bowl and stir well
- Pour the dressing over the prawn and veg mix in the pan and cook for 2 minutes while stirring
- Add the noodles to the mix, and stir until the dressing covers the noodles
- Serve and sprinkle the sesame seeds and coriander over the top
