Boil the noodles for 3-5 minutes (or follow instructions on pack)
In the meantime, melt the coconut oil in a frying pan on a medium heat
Add the prawns and cook for a few minutes until they turn pink. If the pan becomes dry, add a dash of water
Add the mange tout and continue to cook for 1 minute
Prepare the dressing; add all ingredients to a bowl and stir well
Pour the dressing over the prawn and veg mix in the pan and cook for 2 minutes while stirring
Add the noodles to the mix, and stir until the dressing covers the noodles
Serve and sprinkle the sesame seeds and coriander over the top
