Blueberry porridge

Ingredients
Porridge
- 2 handfuls blueberries
- 2 medjool dates
- 5 tbsp oats
- 300 ml milk of choice (e.g. coconut milk)
- 1 tbsp protein powder
Toppings
- 1 handful blueberries
- 1 tbsp sunflower seeds
- 5 walnut halves
Instructions
- Cut the blueberries (2 handfuls) in half. Leave the remaining blueberries to one side for the topping.
- In a pan with a dash of water, stew the halved blueberries on a low heat until soft.
- Remove the pits from the dates and chop into small pieces.
- Add the dates, oats and milk to the pan and continue to cook on a low heat for a few minutes until almost all of the liquid is absorbed.
- Take the porridge off the heat and stir in the protein powder.
- Serve and top with blueberries, sunflower seeds and walnut halves.
