Blueberry porridge

Ingredients

Porridge

  • 2 handfuls blueberries
  • 2 medjool dates
  • 5 tbsp oats
  • 300 ml milk of choice (e.g. coconut milk)
  • 1 tbsp protein powder

Toppings

  • 1 handful blueberries
  • 1 tbsp sunflower seeds
  • 5 walnut halves

Instructions

  • Cut the blueberries (2 handfuls) in half. Leave the remaining blueberries to one side for the topping.
  • In a pan with a dash of water, stew the halved blueberries on a low heat until soft.
  • Remove the pits from the dates and chop into small pieces.
  • Add the dates, oats and milk to the pan and continue to cook on a low heat for a few minutes until almost all of the liquid is absorbed.
  • Take the porridge off the heat and stir in the protein powder.
  • Serve and top with blueberries, sunflower seeds and walnut halves.
