Veg & cashew stir fry

Ingredients
- 100 g black bean noodles https://www.planetorganic.com/explore-blackbean-spag-200g-200g/17063/
- 1 tbsp coconut oil
- 1/2 red onion
- 1/4 head broccoli
- 2 cloves garlic
- 1/2 yellow pepper
- 1/2 carrot
- 1 chilli
- 1 handful snow peas
- 2 handfuls cashew nuts
- 2 tbsp soy sauce
- 1 tsp grated fresh ginger (or 1/2 tsp ground ginger powder)
- 1 tsp sesame oil
Instructions
- In a pan, pour boiling water over the bean noodles, and boil for 5-7 minutes. Drain and set aside when done.
- In the meantime, melt the coconut oil in a frying pan on a medium heat.
- Slice the onion, chop the broccoli and fry in the coconut oil until they begin to soften.
- Finely slice the garlic, and slice the pepper, carrot and chilli. Add to the pan and fry for a further 3 minutes.
- Add a dash of water to the pan if it gets too dry and begins to burn.
- Add the snow peas and cashew nuts to the pan with the soy sauce and ginger, and fry for 2 minutes.
- Just before serving, stir in the noodles and sesame oil.
