In a pan, pour boiling water over the bean noodles, and boil for 5-7 minutes. Drain and set aside when done.
In the meantime, melt the coconut oil in a frying pan on a medium heat.
Slice the onion, chop the broccoli and fry in the coconut oil until they begin to soften.
Finely slice the garlic, and slice the pepper, carrot and chilli. Add to the pan and fry for a further 3 minutes.
Add a dash of water to the pan if it gets too dry and begins to burn.
Add the snow peas and cashew nuts to the pan with the soy sauce and ginger, and fry for 2 minutes.
Just before serving, stir in the noodles and sesame oil.
