Shakshuka

Ingredients
- 1 tbsp coconut oil
- 1/2 yellow pepper
- 400 g canned chopped tomatoes (1 can)
- 1 tomato
- 1/4 tsp paprika
- 1 tsp cumin
- 1 tsp dried garlic powder
- 4 eggs
- 1 handful goats cheese
- 1 handful chopped fresh parsley
Instructions
- In a frying pan, heat the coconut oil on a medium heat
- Chop the pepper and cook for a few minutes in the coconut oil until soft
- Add the canned chopped tomatoes, fresh tomato sliced, paprika, cumin and powdered garlic and heat for a few minutes while stirring
- Using a wooden spoon, part the mix to allow space for the eggs
- Break the eggs into the pan, crumble the goat's cheese over the top and cook on a very low heat until the egg whites are cooked through
- Sprinkle the chopped parsley over the top just before serving

Goes well with chunky wholegrain bread to dip into
