Veg & cashew stir fry

  • In a pan, pour boiling water over the bean noodles, and boil for 5-7 minutes. Drain and set aside when done.
  • In the meantime, melt the coconut oil in a frying pan on a medium heat.
  • Slice the onion, chop the broccoli and fry in the coconut oil until they begin to soften.
  • Finely slice the garlic, and slice the pepper, carrot and chilli. Add to the pan and fry for a further 3 minutes.
  • Add a dash of water to the pan if it gets too dry and begins to burn.
  • Add the snow peas and cashew nuts to the pan with the soy sauce and ginger, and fry for 2 minutes.
  • Just before serving, stir in the noodles and sesame oil.
