Preheat the oven at 160 deg C.
Mix the dry ingredients in a bowl.
Melt the coconut oil for 1 minute in a microwave or heat in a pan on a low heat until melted.
Stir the coconut oil into the dry mix until covering all the oats.
Pour the honey over and mix again.
Cover a baking tray with baking paper and spread the oat mix evenly in the tray.
Bake for 20 minutes (at 160 deg C), mixing half way to ensure the oats are toasted evenly.
While the mix is baking, break up the dried strawberries into small pieces with your hands.
After the oat mix is baked, leave on the tray to cool for 30 minutes.
Add the dried strawberry pieces to the oat mix and store in an airtight container for up to 4 weeks.
