Pre heat the oven to 200 deg C, and cover a large baking tray with baking paper
Wash and scrub the sweet potatoes and cut off any rough sections of skin (peel if preferred)
Cut the ends off the potatoes and discard these. Cut the potatoes into wedges or chunky chip shapes and place in a large bowl
In a small bowl, mix the rapeseed oil, dried mixed herbs and paprika powder
Pour the oil mix over the chips and massage into the chips with your hands, ensuring they are all covered
Place the chips onto the baking tray and cook in the oven for 40 minutes, turning them over half way. Check the chips are not burning after 30 minutes, as if they are cut small, they may need less time

Serve with Greek yoghurt or tzatziki to dip the chips into!
