Strawberry & vanilla granola

Ingredients

  • 400 g oats
  • 70 g desiccated coconut
  • 140 g sunflower seeds
  • 50 g flaked almonds
  • 50 g pumpkin seeds
  • 40 g hemp seeds / chia seeds / flaxseeds
  • 160 g coconut oil
  • 120 g runny honey
  • 2 tsp vanilla extract
  • 20 g dried strawberries (or fresh strawberries when serving)

Instructions

  • Preheat the oven at 160 deg C.
  • Mix the dry ingredients in a bowl.
  • Melt the coconut oil for 1 minute in a microwave or heat in a pan on a low heat until melted.
  • Stir the coconut oil into the dry mix until covering all the oats.
  • Pour the honey over and mix again.
  • Cover a baking tray with baking paper and spread the oat mix evenly in the tray.
  • Bake for 20 minutes (at 160 deg C), mixing half way to ensure the oats are toasted evenly.
  • While the mix is baking, break up the dried strawberries into small pieces with your hands.
  • After the oat mix is baked, leave on the tray to cool for 30 minutes.
  • Add the dried strawberry pieces to the oat mix and store in an airtight container for up to 4 weeks.
